Ask most gardeners and homesteaders what is one crop you grow every year to preserve and the answer is tomatoes. Tomatoes have to be one of my favorite things to grow in the garden. Kinds of Tomatoes
Tomatoes come in many different varieties and kinds including cherry tomatoes, paste tomatoes, slicer tomatoes and more. Some of our favorite varieties are San Marzano Tomatoes, Pineapple Tomatoes, Purple Cherokee Tomatoes and Yellow Pear Tomatoes.
Harvesting Tomatoes
Tomatoes can be harvested when they are fully ripe, half ripe and green. To ripen tomatoes you simply place them on the counter to ripen or place them in a cardboard box lined with newsprint. Green tomatoes can ripen quickly when wrapped in newsprint or placed in a box so please keep an eye on your tomato fruit.
Preserving Tomatoes
Tomatoes in most places grow in the heat of the summer in abundance and will only last so long on the counter and in the fridge. The best way to save your tomato harvest is to preserve the bounty of the season.

Tomatoes can be preserved using a variety of methods. Freezing tomatoes is very popular, quick and easy. Tomatoes can also be dried and canned. Canning tomatoes is very popular with dozens of recipes below.
Freezing Tomatoes
When freezing tomatoes you can do it a number of ways. Tomatoes can be frozen with the skins on but remember to remove the stem. When frozen tomatoes defrost the skins will come off real easy.
You can also freeze sliced or diced tomatoes for quick use in recipes. Tomato sauce can also be frozen for quick easy meals.
Drying Tomatoes
Sun dried tomatoes is one of my favorite things to keep in the pantry and I remember trying different varieties while travelling Italy.
Where we live sun drying tomatoes won’t work so placing tomatoes in a dehydrator or low set oven will achieve a similar result. Then add olive oil and toss with your favorite pasta.
Dried tomatoes have a very long shelf life and can be used in soups, sauces and stews.
Canning Tomatoes
Canning tomatoes is a very popular way to preserve the summer tomato harvest, provide healthy food year round for your family and save money. Food is better when shared and homemade tomato sauce is so much better than store bought. It just takes a little bit of time.
